The nuts are harvested green around mid-June. That's why they are also called St. John's Day (St. John's Day is around June 24th. The date is connected to the summer solstice). It is important that the wooden shell is not yet formed. You still have to be able to pierce the nut with a number pick.

In a complex process, the green walnuts are finally processed into black walnuts. The bitter substances of the pierced green walnuts are washed out through daily watering for several weeks until they are finally boiled down in a sugar syrup with spices.

But this process is worth it! The result is a uniquely delicious specialty that goes very well with cheese, roast game, vanilla ice cream, raclette, lamb's lettuce and much more.

The nutty, sweet taste of black walnuts is unique. The spicy syrup in which the nuts are marinated can also be perfectly reused - e.g. B. in a salad dressing or fruit salad.
